Easy Meatless BBQ Stew


I was in a serious mood for BBQ sauce flavored eats, sweet, smokey and spicy. This was pretty quick and easy.

 

I found these pre-cooked tofu chunks called Tofettes and got 1 8oz pack of BBQ flavor and 1 8oz pack of Garlic/Lemon. Also, a 14oz block of extra firm tofu. The plain tofu was cut up into 3/4" chunks and the Tofettes cut into 3/8" chunks. The plain tofu would break up a bit as I expected during cooking and stirring. The Tofettes held together pretty good.

 

In a large pot I put 1 jar of Ragu Pizza Quick (Traditional) and 1/3 bottle of Bulls Eye original BBq Sauce. Dump in all the tofu stuff and add enough water to cover. Cook slow and stir occasionally for a couple hours. Add extra spices to taste. My favorite ones are garlic, chipotle, and black pepper.

 

It was exactly what I had in mind.

Just microwaved some left-overs with a good sprinkle of grated Parmesean/Asiago/Romano mixture. We're talking at least a 12 dollar entree right there. Washing it down with Guinness Draught with a shot of Pure Vanilla extract as recommended by my niece and I feel like I've just been out on the town.

That looks SO good! Skokey, are you a vegetarian?

I love the idea of a Vanilla Guinness. When I was at the brewery in Dublin, their special of the day was Blackberry Guinness - so yummy!

Is it a full shot of vanilla extract, or like, a splash of vanilla extract? That would be a fun drink for Christmas. I have a family of Guinness fans...

Yeah, No meat for me. I've been that way my whole life.

For vanilla, it was more like a tablespoon of single strength. I just bought some double strength and will try it again with less. Same flavor with less alcohol from the extract might be better.

Since '78 for me - 25 years ago or so, vegetarian food was a pretty much make-it-yourself deal in NH (even pizza and pasta had meat sauce in a lot of places)... it's nice to see veggie options popping up in restaurants.

I got the idea to try this because of a restaurant. I had Szechuan bean curd and figured I could just cook up the tofu in whatever sauces I had on hand. It worked out well.
