HOT SAUCE


One day I decided to make a hot sauce that combined all my favorite spices into one nasty brew. I called it LAZER LIQUID
6 oz can on tomato paste
1 1/2 cup water
1/2 cup vinegar
3/8 cup maple syrup
2 tbs garlic juice
1 1/2 tsp liquid smoke
1 tsp lemon extract
2 tsp onion powder
1 tsp black pepper
1 tsp cumin
1 tsp curry powder
1 tsp ground oregano
1 tsp Dave's insanity sauce

The name came from a comment that a co-worker made about all the spices I put on a pizza. He tried it and called it Lazer Pizza. That inspired me to turn it into a sauce.




LV still hawking the basil I see. Hot lemons are my fav but none of mine are ripe yet either, so they didnt make the sauce cut this year.

Here is the hot sauce recipe. Its kind of fluid... it changes in intensity depending on the mix of peppers you use, whether you seed them or not and how long you cook it (more cooking translates to less heat). The current excellent batch used a mix of serrano, jalepeno and red chili peppers with three ripe haberneros, all seeded, and peppers added towards the end of cooking. We like our hot sauce to have a nice bite but not be scorching, as the flavor is so yummy we gob it on. This makes 4 pints or [sign in to see URL] don't can it, we just bottle it and keep the bottles in the fridge. Im sure you could can it though.

1 1/2 cups chopped onion
1 1/4 cups chopped hot peppers
2 quarts fresh tomatos, skinned, seeded and chopped
1 1/2 TBSP salt
1 1/2 TBSP chopped garlic
1 TBSP fresh oregano or haf that amoutn dried
1 TBSP lime juice

Puree all ingredients in a food processor and simmer 30 minutes. If you want it hotter, add the pureed hot peppers during the last 5 -10 minutes of cooking.
