Dried beans


I pretty much hate them. Canned ones are full of sodium, but I suck at rehydrating. What am I doing wrong? Boil for two minutes, let set for an hour. Check. Crunchy! Let set for additional 24 hours. Check. Crunchy!

Help.

The French folks I grew up with always soaked navy beans or white beans in water over night and then cooked in the oven in a beanpot for at least 6 hours.

I've done pinto beans with no soaking in a crock pot for 8 or 9 hours.

I do about the same as the French folks SKOKEY grew up with, soak overnight. In the morning put them in the bean pot with molasses, brown sugar, water and a piece of pork rind on top. Bake slowly and enjoy for supper. Haven't tried a crock pot but that seems like a good idea.
